Brown Butter Blondies
What do you do when you’re upset or stressed?
Me, well I eat…
I’ve often tried to swim against the tide of this thing called stress eating.. only to fail miserably and allow the tidal wave of sugar, ice cream, fried chicken, and butter to wash me away..
Nothing wipes away the fragments of a bad day like dipping your fried chicken leg in a bowl of ice cream covered in chocolate syrup.
Hey… don’t knock it until you’ve tried it.
This normally happens over a course of a day or two but has the ability to prohibit me from fitting into my jeans for much longer..which in turn has me berating myself for stress eating yet again instead of perhaps running or doing yoga to relieve my anxiety like I told myself I would the last 100 times.. It’s a vicious cycle..
Every day, I look at those jeans in my closet that I want more than anything to be able to zip up.. I mean get past my hips.. It’s like they taunt me… whispering in my ear how I’m never going to make it and will have to give them to my daughter like the others that no longer feel like they should fit me..
Because it’s a choice.. you know.. those pants.. they could fit you if they really wanted too..
It’s this somewhat delusional line of thinking that has lead me to get a personal trainer..
He’s a very nice guy… but makes me do things that I don’t agree with.. like exercise..which makes our relationship difficult… but I have a story about our times together that I will share at a later date..
For now let’s talk about the last few weeks..they’ve been a bit vexing, upsetting,, tense… or just (D) all of the above. And because of this I’ve found myself on numerous occasions sitting in a corner annihilating a box of crunch n munch.. or like now as type this post I’ve just eaten the last of the
Brown Butter Blondie’s you see below..
Maybe a food blog wasn’t the best idea…
Brown Butter Blondies
You might need these:
2 cups bread flour
2 ½ cup light brown sugar
2 tsp. baking powder
½ tsp. salt
1 stick & 2 tablespoons of unsalted butter
3 large eggs
Preheat oven to 350
Combine flour, sugar, baking powder, and salt in a large bowl.
Using a small skillet, cook the butter over medium heat for about 6 minutes or until lightly browned, stirring occasionally. Be sure to keep an eye on this.. you want the butter slightly brown not burned..
Pour browned butter into a small bowl to cool for about 10 minutes.
Combine butter and eggs stirring with a whisk until combined. Pour butter/egg mixture over flour mixture: stir until moistened.
The batter will be very thick, somewhat cookie dough-like (this is ok.. I promise)
Spoon batter into a 9x13 baking pan lined with parchment paper, smooth the top with a spatula.
Bake at 350 for 30 minutes or until a wooden toothpick inserted in the center comes out clean (better known as the tooth pick test) Cool in pan and cut into squares.
And try not to eat the whole pan....
