These little pops that took 2 tries to get right because my freezer was on some alien setting. With the first attempt just turning into this slushie like peach concoction. But no worries it was blended with ice cream, more Bourbon and turned into a shake.  Then consumed while watching Orange is the New Black, because I hate not knowing what the hell people are talking about. And it seems like everyone is talkin about this show.
Sorta like everyone should be talkin about Popsicle week.
Of course there is a hashtag so follow #popsicleweek my good folks, to see all the Popsicle Realness that’s happening this week.
Or click here and head over to Billy’s blog to see who all is riding on the Frozen Treat Pop Truck.
Let me tell ya..there some pretty Kick Ass people onboard with Billy in the driver seat..
Big Thanks to him for putting this all together and inviting me to join.
Now as my gurl Megan says “Let’s Pop Lock and Drop It” with these Peach Julepsicles for the win.
Because what could be better than frozen Bourbon on a stick..

Peach Julepsicles
 Makes 12 Dixie Cup Popsicles

Inspired by A Cozy Kitchen's Watermelon Mint Julep Popsicles

Ingredients:
4 ripe peaches, peeled and sliced
1/4 cup orange juice
1/3 cup bourbon
1 tablespoon granulated sugar
2 tablespoons mint, finely chopped

Directions:
Coarsely chop peaches using a food processor. Transfer about a cup of the chopped peaches to a medium bowl. In the food processor add orange juice, bourbon and sugar. Puree until smooth.
Pour peach puree mixture in the bowl with the chopped peaches. Add mint and stir to combine.

Place dixie cups on a baking sheet add puree peach mixture into each cup. Cover with foil or plastic wrap and freeze for about 2 hours. Or until mixture has solidified enough to insert popsicle sticks.
Insert sticks in the center of each cup and let freeze overnight. These take a little longer to freeze due to the alcohol content. Allow at least 12 hours for these to become solid enough to remove paper cups.
Remove cups by snipping a small cut at the top of each and peeling away the paper from each popsicle.
